                                        家乡的味道组诗

                                           一、老家的高桩馍
                                                                  海  虹

                                             一层层揭开
                                             不经意的放在嘴里咀嚼
                                             没有特殊的调料
                                             就是面的清香和
                                             渐渐微甜的涌潮
                                             如一心舟在跳动的地方停泊
                                             那是几百次几千次的揉揣
                                             才有这家乡的光泽
                                             食之爽口的味道

                                             是的  高桩馍
                                             这是它威武的名号
                                             老家壮实的高桩馍
                                             用尽全力的翻搓
                                             呈现自然分层的环绕
                                             每层就像个久远的歌谣
                                             有时吟唱父亲的脊梁
                                             有时高歌母亲的微笑

                                             忽然想找一个有炉火的地方
                                             用儿时的木筷
                                             把这胖胖的馍儿串起
                                             烤出酥焦
                                             揭开一层品尝
                                             再烤出酥焦
                                             一直把这芬芳烤到
                                             在我笔墨下妖娆

              注:  高庄馍,河南省信阳市潢川县一带老百姓喜爱的一种面食,是日常食品。以面粉加少量温水和酵面,和匀揉透,面发起后,再加干面粉,加碱中和拌匀。面团放面板上,再以固定在木桩上的粗竹杠用力下压,一手握竹杠,一手翻叠面团,压三十余次。再将面团分成面剂,个个揉透后,揉成高圆馍头,上笼蒸熟。此馍软硬适当,色白有层次,嚼有甜味。

                                          二、情思挂面

                                                             海   虹

                                           昨天的我
                                           依旧奔波在都市间
                                           今天的故乡
                                           就在我眼前
                                           推开那扇熟悉的门
                                           开怀的拥抱
                                           熟悉的温暖

                                           母亲身带厨房的炊烟
                                           端出热腾腾的一碗面
                                           飘香的油花
                                           还有白里透黄的荷包蛋

                                           啊
                                           家乡的这碗面
                                           滑亮似玉
                                           细腻柔软
                                           那滋味早已在口中蔓延
                                           索性如儿时那般
                                           用筷子卷出鸡腿的模样
                                           让母亲开心露欢颜
                                           原来这碗鸡汤面
                                           才是我心中那根
                                           剪不断  理还乱
                                           缠缠绵绵的情思线

注:潢川贡面又称光州贡面,方言挂面。是一种著名的汉族面食。以精粉和芝麻香油为主料,清油兑水盐和细面粉,经过拌、揉、发酵、盘条、上架、拉扯、晾晒、截切等十多道工序制成。

据《光州志》记载,早在唐代,光州已生产挂面,当时"风销华夏,夺魁九州",被人们称为"光州魁面"。到宋朝时,光州州官令工人将这种面去其头尾,取其中间,匀截成20公分左右的长度,用红绿纸卷成圆筒形,每筒半斤,作为礼品进献给宫廷,宋仁宗食后,大赞:"美哉,光州贡面!"从此光州精制的筒装挂面,以"贡面"之称闻名于世。

                               三、长不高的瓦儿糕 
                                                 海虹

                                 甑
                                 远古时代的炊具
                                 还在家乡的小推车上燃烧
                                 演绎舌尖上的味道

                                 清香的米粉
                                 加上自己的调料
                                 红糖
                                 是最吉祥的颜色
                                 木甑
                                 在岁月的历史中创造
                                 噗嗤噗嗤的热气
                                 香味开始在镇潢桥上飘荡
                                 随河风缠绕在树梢

                                 不管是艳阳高照
                                 还是风雪呼啸
                                 软糯香甜的瓦儿糕
                                 那一声吆喝
                                 牵动了多少游子的集结号
                                 瓦儿糕  瓦儿糕
                                 我就是那个向你奔跑
                                 的小小少年
                                 今天我不想长大
                                 不想长高
 
      注:碗儿糕的原料是家家都有的大米,把米加水打成浆再发酵。把发好的米浆粉一勺一勺舀进铺了白纱布的碗状木甑里,蒸熟了端出来,虽然其貌不扬,但热气腾腾、小巧玲珑、圆润丰满、香软可口,是老少皆爱的小吃。

                                                        胡辣汤
                                                                海虹

                                          家乡的镇潢桥不知断了多少年
                                          桥头上边那家老字号
                                          胡辣汤挑了一担又一担
                                          手揪的肉疙瘩
                                          方块的面筋入口弹性又软绵
                                          毛巾抹一下碗底
                                          上面飘着几根鸡蛋面
                                          那一节节的粉条可是
                                          母亲手中的风筝线
                                          长长短短都走不出
                                          父亲的心畔

                                          青春出外的我们
                                          归来已不是少年
                                          但自信的成长
                                          仍鼓起力挽狂澜的风帆
                                          心  有时会孤单
                                          身  有时会疲倦
                                          走一走家乡的青石板
                                          想一想儿时搭肩的小伙伴
                                          小潢河的风总会把我的乳名呼唤
                                          那断桥的残壁总能触动我心弦
                                          不管离家多遥远
                                          眼前的这碗胡辣汤
                                          烫烫的
                                          辣辣的
                                          依旧温暖我心田

           注:凡是在潢川生活多年的人都知道,也品尝过本地的胡辣汤是河南胡辣汤里的精品。辣不是特辣,是用胡椒粉拿出来的辣味,胡辣汤主要由滑肉、粉条、面筋、黄花菜、木耳组成。是潢川家喻户晓,人们非常喜爱的一种小吃。

                                                         芝 麻 糖 馍

                                                                    海虹
                                                      把芝麻炒香
                                                      拌上爸爸压碎的龙虾糖
                                                      白面裹住饱满的馅料
                                                      压扁  按圆
                                                      贴在平锅上
                                                      燃烧起团圆的希望

                                                      刚烙好的糖馍气鼓着
                                                      咬上一口
                                                      满嘴留香
                                                      这样好吃的糖馍不是天天有
                                                      十五才是它的主场
                                                      圆桌摆上丰收的金黄
                                                      仰望新月
                                                      手心留一缕桂香
                                                      和风吹来旧时光

     注:糖馍的做法——
    1.用小火将芝麻炒香;2.用机器碾碎;3.拌入糖粉;4.发面(我是用面包机发的):将面粉、酵母粉放入面包机内;5.启动发面档,将温水缓缓倒入;6.机器搅拌结束滴点油,防干;7.大约1小时后,面就发好了。注:手工发面是将面粉、酵母粉和温水混合揉成团,放到温暖处约两小时,发到两倍大。8.糖馍生坯的制作:将发好的面团取出揉成长条,分成大小差不多的等份。(此段文字来源于百度)

   海虹暂时写了这六首,以后,有更新再加上。听说还有三股油条......很期待哦。当然,哪位朋友还有非常回味的家乡食品可以写在这里,说不定海虹灵感以来,又会诞生一首美到心底的诗歌。
